It is best to purchase extra virgin olive oil from one region/country, cold pressed olive oil is a superior option, packaged in a dark colored glass container and stored when not in use in a cool, dark place. Olive Oil does not have a high smoke point, therefore, beware and do not heat up over 400 degrees Fahrenheit. To be extra safe, use your olive oil in cold or room temperature dishes.
